CORNMEAL MUFFINS 
1 c. yellow cornmeal
1 c. all purpose flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. sugar
1/4 c. egg substitute or 2 egg whites
1/4 c. vegetable oil
Vegetable cooking spray
1 1/4 c. plain non fat yogurt

Combine meal, flour, baking powder, soda, sugar and salt in large bowl. Make a well in center of mixture. Combine egg, yogurt and oil; add to dry ingredients, stirring just until moistened. Spoon mixture into muffin pans coated with cooking spray. Fill 3/4 full. Bake at 425 degrees for 12 to 14 minutes. Low fat and cholesterol.
