2 med. eggplants, sliced and salted
6 tbsp. olive oil
1 onion, chopped
2 tomatoes, peeled, seeded, and chopped
2 cloves garlic, crushed
1 tbsp. basil
Black pepper, freshly ground
1 1/2 c. chopped ham, diced thinly
1/2 lb. Mozzarella cheese, thinly sliced
1/4 c. shredded Parmesan cheese
