FRIED CHICKEN 
1 chicken, cut up
flour
salt and pepper to taste
oil, shortening to fry

Sprinkle chicken with salt and pepper. Coat with flour. In large skillet, heat 1/2-inch oil (about 2 1/2 cups) over medium-high heat to about 400°F. Add chicken, skin side down. Place larger pieces in center. Fry 10 minutes or until crisp and golden. Cover and cook 5 minutes longer. Turn chicken. Reduce heat to medium. Cover and cook 10 minutes. Uncover and cook 5 minutes, crisp skin. Remove chicken and drain on paper towel.
