SWEET POTATO CROQUETTES 
1 c. crushed corn flakes
2 beaten egg whites
4 marshmallows
2 tbsp. sugar
3 med. sized sweet potatoes
1 1/2 tbsp. butter
1/2 tsp. lemon juice

Be sure to cook sweet potatoes, peel and mash. Place butter, lemon juice and sugar in them. Place croquettes by shaping potatoes around marshmallows. Let cool. After you dip in egg whites, roll in corn flakes and fry in deep fat at 375 degrees until they are brown. Drain on absorbent paper and serve at once. Makes 4.
