GERMAN POTATO SALAD 
5 lbs. little new potatoes
10 slices bacon, chopped
1 med. onion
2 ribs celery
1 c. vinegar
1/3 c. water
2/3 c. sugar
1 tbsp. flour
Salt, pepper & dried parsley to taste

Boil potatoes in salt water in skins. Cool, peel and slice. Fry bacon until crisp. Pour over potatoes. Save 4 tablespoons bacon grease. Saute onion and celery in grease until transparent. Pour over potatoes and mix.

Cook on medium heat the vinegar, water and sugar until thickened. Pour over potatoes. Sprinkle with salt, pepper and dried parsley to taste. Serve hot.
