CHICKEN PIZZIOLA 
1 whole chicken, cut into 6 pieces
8 med. potatoes, cut into quarters
1 onion, cut into 4 pieces
1 (16 oz.) Mozzarella cheese, grated
1 (16 oz.) can crushed tomatoes
2 tsp. Italian seasoning
Dash of salt & pepper

Place all 6 pieces of chicken into a 2 inch baking pan. Place potato and onion pieces around the chicken. Add 16 ounce can of crushed tomatoes. Sprinkle with seasoning, salt and pepper. Bake for 60 minutes in 400 degree oven. Remove from the oven, sprinkle with Mozzarella cheese. Return to oven for 10 minutes. Remove and let sit for 5 minutes then serve.
