MOM TROYER'S BANANA BREAD | |
2 c. flour 1 tsp. baking soda 1 tsp. salt 1/2 c. butter 1/4 c. milk 1 tsp. vanilla 1/3 tsp. almond flavoring 1 c. coconut 1/2 c. chopped nuts 1 c. sugar 2 unbeaten eggs 1 tbsp. grated orange rind (may be omitted) 1 c. mashed banana (very ripe, may be black) Preheat oven to 350°F. Sift together flour, soda, and salt. Add butter. Combine milk, vanilla and almond flavoring. Stir in coconut and nuts. Add sugar. Stir well. Then add unbeaten eggs, orange rind (if desired) and mashed banana. Blend all thoroughly. Transfer batter to a greased and lightly floured loaf pan and bake until a toothpick inserted in center comes out clean (about 45 minutes). |
