MAI-THAI PIE 
1 pt. pineapple or lemon sherbet
1 pt. vanilla ice cream
1 tbsp. lemon juice
1 tsp. grated orange peel
1 (20 oz.) can crushed, drained pineapple
7 oz. pkg. flaked coconut
1/4 c. lime juice
1 tsp. grated lemon peel
1 tbsp. rum OR tsp. rum extract
1 graham cracker crust

Combine all ingredients. Spread in prepare graham cracker crust. Sprinkle coconut on top (optional) and freeze.
