SWISS VEGETABLE MEDLEY 
1 16 oz. bag frozen broccoli or vegetable mix
1 can cream of mushroom soup
1/3 c. sour cream
1/2 tsp. coarse ground pepper
1 small jar pimentos, 4 oz.
1 2.8 oz. can fried onions
1 c. grated Swiss cheese

Preheat oven to 350°F. In a large bowl, combine vegetables, soup, 1/2 cup cheese, sour cream, pimentos, pepper and 1/2 can onions. Mix and bake in covered shallow 1-quart casserole for 30 minutes or until vegetables are tender. Place remaining Swiss cheese and onions on top and bake uncovered for about 5 minutes or until brown on top.
