STRAWBERRY JAM | |
1 (12 oz.) pkg. frozen strawberries, loose pack & sugar free, thawed 1/4 c. unsweetened frozen pineapple juice concentrate, thawed 1 c. mashed bananas 3 tbsp. cornstarch 3 tbsp. cold water Bring strawberries, including juice and pineapple juice concentrate to a boil in a small saucepan over medium heat. Turn to low. Whip mashed bananas until creamy in a small bowl. Add to strawberry mixture and mix together until blended. Combine cornstarch and cold water together in a bowl until creamy. Add to strawberry mixture. Stir constantly and bring to a boil. Boil 1 minute. Mixture will dark and thicken. Cool to room temperature. Keep refrigerated. |
