CRANBERRY BRAN MUFFINS 
3/4 cup whole bran cereal (I use Kellogg's All Bran)
3/4 cup milk
1 slightly beaten egg
1/4 cup packed brown sugar
1/4 cup vegetable oil
1 cup all-purpose flour
1/4 cup wheat germ
1/2 tsp. each baking powder & baking soda
1/4 tsp. salt
3/4 cup coarsely chopped cranberries

In small bowl combine bran cereal and milk. Let stand 5 minutes. Stir in brown sugar, egg and oil.

In medium bowl combine flour and wheat germ, baking powder, baking soda and salt. Add bran mixture. Stir just until moistened. Fold in cranberries. Fill paper lined or greased muffin tin almost to top. Sprinkle with Crunchy Topping (see below).

Bake at 400°F for 20 minutes.

CRUNCHY TOPPING:

2 tbsp. brown sugar
2 tbsp. finely chopped pecans or walnuts
1 1/2 tbsp. wheat germ
1 tbsp. all-purpose flour
1/2 tsp. cinnamon

Stir in 2 tablespoons melted butter. Sprinkle on top of muffins before baking.

Note: I double the topping recipe.
