COCONUT CUSTARD PIE 
3 eggs, slightly beaten
1/2 tsp. salt
1/2 c. sugar
2 1/2 c. milk
1 tsp. vanilla
3/4 c. coconut
1 unbaked 9" shell with high-fluted rim

Combine eggs, sugar, salt, milk, vanilla and coconut; mix well. Pour into pie shell. Bake at 425 degrees until knife inserted comes out clean, about 35 minutes. If desired, sprinkle nutmeg over top of pie before baking. Cool before serving.
