FRESH APPLE POUND CAKE 
2 c. sugar
3 eggs
1 1/2 c. Wesson oil
3 c. plain flour
1 tsp. baking soda
1 tsp. salt
2 tsp. vanilla flavoring
3 c. grated apples
3/4 c. chopped pecans
1 sm. can coconut

Cream Wesson oil, eggs and sugar. Sift flour, salt and soda together; add to creamed ingredients. Add flavoring, beat for 7 or 8 minutes, then fold in (with spoon) apples, nuts and coconut.

Grease and flour 10 inch tube pan and bake at 300 degrees for 1 hour and 25 minutes. Note: Grate apples while batter is beating - will prevent them from turning brown.
