ROAST PORK WITH PINEAPPLE 
1 (3 to 5 lb.) pork loin roast, boneless is best
1 (20 oz.) pineapple
2 tbsp. brown sugar
Salt and pepper
2 tsp. cornstarch
1/2 tsp. spices, mixed

In a shallow roasting pan, place roast on rack fat side up. Salt and pepper roast. Insert meat thermometer. Bake, uncovered at 325 degrees for 1 hour 45 minutes or until thermometer reaches 170.

In a pan, mix undrained pineapple, brown sugar, cornstarch and spices. Cook slowly until mixture is thickened. Stir constantly. Baste roast the last 20 minutes 4 or 5 times. Let stand 15 minutes before slicing. Makes 10 to 12 servings.
