VEGETABLE FISH BAKE | |
3 med. onions (sliced) 2 tbsp. butter 1 lb. fillets (salt and pepper) 4 lg. mushrooms (sliced) 1 green pepper (chopped) 1/4 c. dry wine or cooking wine 1 tbsp. lemon juice 2 whole pimientos Preheat oven 350 degrees. Place onions in bottom of baking dish, melt butter, pouring over top of onions. Place fish on top of onions. Spread mushrooms, pepper and pimientos, on top of fish. Combine wine or cooking wine and lemon juice and pour over vegetables. Bake until fish flakes easily when tested with fork. Bake for 30 to 35 minutes. |
