PUMPKIN DROPS 
1 1/2 c. sugar
1/4 c. oil
2 eggs
3/4 tsp. cinnamon
1/4 tsp. salt
1 tsp. vanilla
1/2 tsp. nutmeg
1 c. solid pack pumpkin
3 1/2 c. flour
4 tsp. baking powder
1/2 tsp. ginger
1/2 c. buttermilk

Add vanilla and pumpkin, sugar, oil and eggs in large bowl. Add flour, baking powder, salt, cinnamon, ginger and nutmeg. Add dry ingredients to sugar mixture alternating with milk, beat well after each addition. Heat 1 1/2 inch of oil to 360 degrees. Drop batter by teaspoonful into hot oil about 1 1/2 minutes per side until brown. Drain on paper towels. May be dipped in sugar.
