PUNGENT PORK ROAST 
5 lbs. pork loin
1 tsp. seasoned salt
1/4 tsp. seasoned pepper
3/4 c. dark brown sugar
1 tsp. dry mustard
1/4 tsp. ground ginger
2 tbsp. vinegar
1 tsp. soy sauce

Preheat oven to 350 degrees. Sprinkle pork with salt and pepper; insert meat thermometer to center of meat. Bake in shallow roasting pan for 2 1/2 hours, or until thermometer reads 175 degrees. Remove all fat from drippings in pan. Combine remaining ingredients as a glaze spread all of it over pork. Roast pork about 1/2 hour or to 185 degrees on thermometer, basting it occasionally with glaze from bottom of pan. Remove pork to heated platter. Remove fat from drippings; add 1/4 cup water to drippings, bring to boil. Serve with pork. Serves 8 to 10.
