EASY POTATO CASSEROLE 
32 oz. pkg. hash brown potatoes, thawed
1 pt. sour cream
2 cans potato soup
8 oz. Cheddar cheese, grated
1 tsp. salt
1 tsp. pepper
1/4 c. onion, chopped
1/2 c. Parmesan cheese

Mix all ingredients together and pour into 9 x 13 inch greased pan. Sprinkle top with additional Parmesan cheese. Cover and bake for 30 minutes at 350 degrees. Remove cover and bake 30 minutes longer. Serves 12.
