PLAIN DOUGHNUTS 
1 1/4 c. sugar
3 fresh lg. eggs
2 tbsp. oil
1 c. buttermilk
1 tsp. vanilla
1 tsp. baking soda
1 tsp. salt
1/2 tsp. nutmeg

Beat sugar, eggs and oil together. Add soda to buttermilk and add to first mixture along with the vanilla. Add salt and nutmeg to some flour and then keep adding flour until it can be handled easily. I like it better to make them a little too soft to handle and put into refrigerator for a day or two before frying. I find I can handle better with less flour if I keep them refrigerated.
