BARB'S BEST OATMEAL COOKIES 
1/2 cup (1 stick) butter
1/2 cup brown sugar
1/2 cup granulated sugar
1 egg
1 tsp. vanilla
3/4 cup oat flour
1 1/2 cups oatmeal
!/2 tsp. baking soda
1/2 tsp. salt
1/2 cup butterscotch baking morsels
1/2 cup vanilla flavored baking morsels
1/2 cup shredded coconut
3/4 cup dry roasted peanuts

Preheat oven to 350°F.

Place the baking morsels, coconut, and peanuts in a food processor and process until the ingredients are smaller in size. Cream butter and the both sugars until batter is smooth. Add the egg and vanilla and beat until smooth.

In a separate bowl mix the oat flour, oatmeal, baking soda and salt together. Add to the butter mixture and mix well. Add the processed morsels, coconut and peanuts and mix well. Roll dough in 1-inch balls and place on a greased cookie sheet.

Bake at 350°F for approximately 15 minutes. After removing the cookie sheet from the oven let the cookies set for a minute or so.
