BEST EVER OATMEAL COOKIES! 
1 cup shortening
1 cup brown sugar
1 cup white sugar
2 eggs, beaten
2 cups all-purpose flour
1 tsp. baking soda
2 cups rolled oats
1/2 tsp. vanilla
1/2 tsp. almond flavoring*
3/4 cup chopped nuts (optional)

Cream shortening and sugars. Add beaten eggs. Sift flour and baking soda and fold into first mixture with rolled oats. Add flavorings and nuts, if desired.

Drop by teaspoonful onto greased cookie sheet and bake at 375°F for about 10 minutes.

Note: If almond flavor is not available, substitute with additional vanilla.

Makes about 5 dozen.
