CHRISTMAS CAROL CAKE 
1 c. oil
2 c. white sugar
3 eggs
2 c. flour
2 tsp. vanilla
1 1/2 tsp. cinnamon
1 tsp. baking soda
3 tart apples, diced
1 c. chopped walnuts or pecans
3/4 c. raisins

Preheat oven to 325 degrees. Spray 12-cup Bundt pan with Bakers Joy. Combine ingredients as listed; blend well after each addition.

Pour into prepared pan; bake 1 hour and 10 minutes or until toothpick comes out clean. Cool 45 minutes. Invert on platter; glaze and decorate.

GLAZE:

1 c. sifted powdered sugar
1 tbsp. milk
1/2 tsp. vanilla

Mix until smooth. If too thick, add a few drops of milk.
