SPINACH A LA SAN FRANCISCO 
1/2 c. chopped onion
1 finely diced garlic clove
3 tbsp. butter or olive oil
1 tsp. salt
1/2 tsp. oregano
1/4 tsp. pepper
2 pkgs. frozen spinach, defrosted
1/2 c. sour cream

Saute onion and garlic in butter or olive oil until tender. Add salt, oregano, pepper, spinach, and blend with onion and garlic.

Bring to a boil and simmer for 5-6 minutes; drain well. Stir in 1/2 cup sour cream a small amount at a time. Keep warm but do not boil again.
