SAN FRANCISCO ZUCCHINI BREAD 
3 eggs
2 c. sugar
2 tsp. vanilla
1 c. oil
3 c. peeled & grated zucchini, drained
3 c. flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2 c. raisins (opt.)
1 c. pecans
1 c. drained, crushed pineapple

Beat together eggs, sugar, vanilla and oil in large bowl. Add zucchini. Combine flour, baking powder, baking soda, salt, raisins and nuts, then add to zucchini mixture. Add pineapple and mix well. Pour into greased and floured 9"x5" loaf pan. Bake at 350 degrees for 55 to 60 minutes. Makes 2 loaves.
