FROZEN MINT DELIGHT 
1/2 sm. box vanilla wafers, crushed
2/3 c. butter
2 c. powdered sugar
3 eggs, separated
2 sq. unsweetened melted chocolate
1 tsp. vanilla
1/2 c. chopped nuts
1 qt. green mint ice cream, softened

Line 2 ice cube trays with vanilla wafer crumbs. Cream butter and sugar until smooth; add egg yolks, chocolate and vanilla. Beat; add nuts. Fold in stiffly beaten egg whites. Spread chocolate mixture over crumbs, freeze for 3 hours. Spread ice cream over frozen mixture, return to freezer. Yield: 12 to 16 servings.
