SPINACH-BACON SALAD | |
1 lb. fresh spinach, trimmed 1 slice lean bacon 1 med. size green pepper, cored, peeled and sliced into 1/4 inch strips 1 clove garlic, minced 1/2 c. cider vinegar 1/8 tsp. black pepper 1 tbsp. vegetable oil Wash spinach, pat dry, tear into bite size pieces. In a heavy skillet, cook bacon until crisp, remove bacon and drain on paper towel. Discard all but 1 tablespoon of drippings. Add pepper, onion, garlic and cook for 2 minutes. Add vinegar and black pepper, bring to a boil. Reduce heat and simmer uncovered for 1 minute. Pour over spinach, sprinkle with oil and toss well. Crumble bacon over top and serve. |
