SPINACH SALAD WITH MINT AND
BACON
 
2 slices bacon
4 tsp. red wine vinegar
1 tbsp. olive oil
1/2 tsp. ground pepper
1/4 tsp. salt
1/4 tsp. minced garlic
8 c. washed, torn spinach leaves
1/4 c. chopped fresh mint

Prep time: 15 minutes. Microwave time: 3 minutes.

Place bacon on microwaveproof rack and microwave on high 2 minutes. Drain on paper towels; crumble. Pour 1 tablespoon bacon drippings into 1 cup microwaveproof measure and add vinegar, oil, pepper, salt and garlic to make dressing. Microwave on high 45 seconds. Combine spinach, mint and bacon in salad bowl; add dressing and toss to coat. Makes 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
