FRESH APPLE CAKE 
4 c. finely chopped apples
2 eggs
2 c. white sugar
2 tsp. cinnamon
1/2 c. oil
1/2 c. chopped nuts
2 c. flour
1 tsp. salt
2 tsp. baking soda

Put apples in a bowl. Break eggs over apples and stir. Add sugar, cinnamon, oil and nuts. Sift flour, salt and soda. Mix together and beat well. Bake in 9"x13" pan, greased, at 350 degrees for 45 minutes.

Serve with whipped cream or caramel sauce.

CARAMEL SAUCE:

1/2 c. brown sugar
1/2 c. white sugar
1/2 c. whipping cream (I use evaporated milk)
1/2 c. butter
1 tbsp. flour
1 tsp. vanilla

Bring to a boil in saucepan. Boil 1 to 2 minutes and serve warm over cake. If you want it more like a frosting add 2 tablespoons flour.
