CARAMEL APPLE SALAD 
3 lg. Granny Smith apples, unpeeled & cut into sm. pieces
8 oz. jar dry roasted peanuts
1 can crushed pineapple, drained well

Put above ingredients in a large bowl.

SAUCE:

2 c. powdered sugar
2 eggs
1 c. butter, room temperature
1 lg. container Cool Whip

Beat only first 3 ingredients of sauce for 5 minutes. Blend in Cool Whip and pour over other ingredients and mix well. Chill for several hours.
