“PALATSCHIKEN” IS IN:

PALATSCHIKEN 
2 cups milk
4 large eggs
1 tsp salt
1/4 cup sugar
3 cups flour (not self-rising)
Vanilla Flavor (optional)

In a large bowl, start with half the milk, add all the sugar, salt, and eggs. With the beater, mix together and add the flour little by little, then rest of milk, until you have a thickly flowing dough.

Heat omelette pan and melt shortening. (Butter tends to burn so don't use it). Pour about 1/3 cup of dough in hot pan, tilt to cover bottom of pan. When edges brown, flip over, finish cooking.

Goes very fast, but make sure pan is hot, or the dough will stick to it. Fill with jelly, top with powdered sugar. Leftover Palatschiken: you may add the strips into hot sweetened milk (add sugar, vanilla and raisins if you have them).

Your people must be my people! In the version I have it also has a 1/4 c. cream of wheat. I also like to add cinnamon and vanilla.

My grandma made these with cottage cheese and egg and sugar filling. Then roll them melt butter pour over palachinki mix sugar and some cinnamon and sprinkle on top. Bake 30 minutes on 350°F.

Wwe mix cottage cheese with dry vanilla instant pudding mix and add a little sour cream. The filling is the best part!
