SWEET POTATO PONE 
2 lg. eggs
2 c. milk
1 1/2 tbsp. vanilla extract
1 c. sugar
1/4 tsp. grated nutmeg
1/2 tsp. grated orange peel
3 med. sweet potatoes, peeled & grated
6 tbsp. unsalted butter

Preheat oven to 350 degrees. Beat the eggs in a large mixing bowl. Beat in the remaining ingredients and pour into a buttered 2-quart souffle dish. Bake until firm and golden brown, about 2 hours. Let stand 20 minutes before serving. Flavor intensifies as it stands. Serves 8.
