RENEE'S SPINACH & ARTICHOKE
CASSEROLE
 
2 (10 oz.) boxes chopped spinach
1/2 c. chopped onion
1 stick butter
1 (16 oz.) can artichokes, quartered
1 pt. sour cream
1/2 c. Parmesan cheese

Cook spinach as directed; drain, squeeze water out real good. Saute in butter 1/2 cup onion. Mix artichoke and onion with sour cream and spinach. Place in greased casserole dish. Sprinkle cheese on top. Bake at 350 degrees for 20-30 minutes. Can make in advance and freeze.
