BROCCOLI CHICKEN CASSEROLE | |
2 or 3 whole chicken breasts 1 pkg. frozen broccoli 1 can cream of chicken soup 1/2 can (5 oz.) Hellmann's mayonnaise 1 1/2 tbsp. lemon juice 2 tbsp. melted butter 1/2 pkg. (3 oz.) seasoned croutons (more, if desired) Cook chicken. Prepare broccoli according to package directions. Break chicken into small pieces. Put half of the chicken in bottom of casserole dish, then broccoli, then remaining chicken. Mix together soup, lemon juice, and mayonnaise. Pour over top of chicken. Cooks faster if these ingredients are heated first. Melt 2 tablespoons butter and mix with croutons. Sprinkle over top. Bake at 350 degrees for 30 to 40 minutes. Mixture should be bubbly. Serves 6 to 8. |
