RACQUET CLUB GAZPACHO 
3 cucumbers, peeled and seeded
3 green peppers, seeded
3 yellow onions
8 radishes
4 ripe tomatoes, peeled and seeded
2 (8 oz.) cans Italian style tomatoes, chop and add to vegetable with juice
4 c. canned consomme
2 tbsp. olive oil
Juice of 2 lemons
2 tsp. salt
1/2 tsp. pepper
3 sprigs fresh dill, chopped

Chop first 5 ingredients very fine. Strain tomatoes, and add consomme and olive oil. Mix in rest of ingredients and chill.

Serve cold. Pour into chilled soup plates with an ice cube placed in center. Sprinkle with crisp croutons on top. Serve immediately.
