COUNTRY SUPPER CASSEROLE 
1 1/2 lb. ground beef
1/2 c. chopped onion
3 tbsp. vegetable oil
1 tsp. salt
1/8 tsp. pepper
2 (8 oz.) tomato sauce
2 c. (1 inch pieces) cooked green beans
2 c. sliced carrots
2 c. mashed potatoes

Brown meat, onion in foil. Pour off oil. Place in 3-quart casserole. Put salt, pepper, tomato sauce over meat. Arrange beans, carrots over meat. Spoon mashed potatoes around edges of casserole. Pour 1 can tomato sauce. Bake in moderate oven (350 degrees) 30 minutes until potatoes are browned. Serves 6-8.
