MEATY MANICOTTI 
1 lb. lean ground beef
1/4 c. chopped onion
1 can chopped spinach, drained
1/2 c. cottage cheese
2 eggs, lightly beaten
Salt and pepper
12 cooked manicotti shells
1 (15 1/2 oz.) jar spaghetti sauce with mushrooms
1/2 c. grated Parmesan cheese
1 c. shredded Mozzarella cheese

Preheat oven to 350 degrees. Grease 9x13 inch pan. Brown ground beef, add onions. Saute 3 to 4 minutes. Drain off excess fat. Remove from heat and add spinach, cottage cheese, eggs, stir until well mixed. Fill each shell with 1/4 cup meat mixture. Place filled shells in prepared baking pan. Pour spaghetti sauce evenly over filled shells. Sprinkle Parmesan, then Mozzarella cheese over sauce. Bake approximately 30 minutes.
