SOY CAKES OR KUGEL | |
2 c. cooked soy beans 1 c. diced celery 1/2 c. cooked brown rice 1/2 c. chopped onion 2 eggs 1/2 tsp. salt, optional 1/4 c. finely chopped green pepper 1/2 c. vegetable oil Cooking soy beans; soak 1 cup beans in 4 cups water for about 12 hours. Cook 2- 3 hours or until tender. Add water as needed. Grind all ingredients, except eggs in grinder. Add eggs and form into cakes. Fry until golden. Serves 6. May also be baked as a kugel. |
