STUFFED MUSHROOMS 
12 lg. mushrooms
1/2 c. minced onions
1/4 c. minced green peppers
1 c. seasoned bread crumbs
4 strips bacon, cooked and crumbled
1 tbsp. olive oil
2 tbsp. butter
Freshly grated Parmesan cheese

Rinse mushrooms and blot with paper towels. Pull out stems and chop. Saute stems with onions and green peppers in olive oil and butter. When vegetables are tender add bread crumbs and bacon. Toss until crumbs are lightly browned. Rub mushrooms with olive oil and mound filling into them. Place in shallow baking dish and sprinkle tops with Parmesan cheese. Bake at 375 degrees for about 15 minutes.
