STUFFED MUSHROOMS 
1/2 lb. medium sized mushrooms, cleaned, stemmed, and wipe dry (put aside)

In a pan, saute chopped onion, chopped pepper, and chopped mushroom stems. When sauteed, put in bowl; add 1 cup chopped, cooked chicken, salt and pepper, 1/2 teaspoon oregano, and 1 little garlic. Moisten with 1 tablespoon or more sour cream (enough to hold mixture together).

Stuff in mushroom hollow, then roll mushrooms in melted butter and bread crumbs; do same again - make crusty. Put in baking dish; add 1/4 - 1/2 cup melted butter, more salt and pepper, and more oregano (should be highly seasoned). Bake at 325 degrees for 1/2 to 3/4 hour. Tastes like mushrooms stuffed with crab meat.
