GUMBO CHICKEN SOUP | |
1 full recipe chicken stock or 2 cans chicken broth 1/2 c. chopped fresh green onions 1/2 c. fine chopped green pepper 1 c. tomatoes, fresh or canned 1/8 tsp. baking soda 1 can okra or fresh okra, cooked until tender (20 min.) and cut up 1/2 c. (or more) cooked rice Saute onions until delicately brown. Then add green pepper, tomatoes, baking soda and okra. Cook all together 5 minutes and then add it to chicken stock. Simmer together about 20 minutes, adding rice 5 minutes before end of cooking time. Serves 6 to 8. |
