GREEN BEANS PARMESAN | |
2 (9 oz.) pkg. frozen French style green beans Milk 1/4 c. chopped onion 2 tbsp. butter 2 tbsp. all purpose flour 1/2 tsp. salt 1/4 tsp. grated Parmesan cheese 1 (5 oz.) can water chestnuts, drained and sliced 3/4 c. soft bread crumbs 2 tbsp. butter, melted Cook beans according to package directions; drain, reserving liquid. Add milk to reserved liquid to make 1 1/4 cups. Set aside. In saucepan, cook onion in 2 tablespoons butter until tender; blend in flour and salt. Stir in milk mixture all at once; cook and stir until thickened and bubbly. Stir in half the Parmesan cheese. Stir in the cooked beans and sliced water chestnuts; turn into a 1 quart casserole. Toss crumbs with remaining Parmesan and melted butter to combine; sprinkle atop casserole. Bake, uncovered at 350 degrees until bubbly, about 30 minutes. Garnish with additional sliced water chestnuts, if desired. Makes 6-8 servings. This is great for dinner parties, holidays, etc. You can prepared it a day in advance and refrigerate. Follow all steps except baking. The day of even, bake at 350 degrees for a little longer, about 45 minutes or so. It needs the extra time because of refrigeration. |
