BRUNCH EGG CASSEROLE 
4 c. toasted bread cubes (or 16 oz. box croutons)
8 oz. light shredded cheddar cheese
8 slightly beaten eggs (or 16 egg whites)
3 c. skim milk
1/4 tsp. salt
1 tsp. prepared mustard
1/4 tsp. onion powder
1/8 tsp. pepper

Place bread cubes in bottom of greased 13" x 9" x 1 3/4" baking dish. Sprinkle on cheese. Blend remaining ingredients and pour over bread cheese mixture. Bake at 325 degrees until egg mixture is set, 40 to 45 minutes. Sprinkle bacon bits atop casserole during last 10 minutes of baking. 10 servings.
