HUSH PUPPIES 
2 c. fine cornmeal
2 tbsp. baking powder
1 tbsp. salt
1 c. finely chopped onion
1 1/4 c. milk
1/2 c. water

Mix first 3 ingredients, then stir in onions. Blend in milk and water, adding more cornmeal as necessary to make dough stiff enough to be handled. Shape batter into small round or elongated cakes, drop them into deep, hot fat, 360 degrees and turn occasionally until well browned.

Hush puppies are the most flavorful when fried together with fish and served piping hot.
