STRAWBERRY ROLLOVERS | |
1 pt. fresh strawberries, washed and cleaned 1/3 c. sugar 1/2 c. (1/2 tub) butter 1/2 c. sugar 8 (5 inch) thin pancakes Slice strawberries and measure out 3/4 cup. Mash the 3/4 cup with a fork until there is about 1/2 cup; set aside. Sprinkle remaining sliced berries with 1/3 cup sugar; cover and chill until ready to serve. Place butter in small mixer bowl; beat gradually adding 1/2 cup sugar until fluffy. Very slowly heat in mashed strawberries adding a small amount at a time. Blend at high speed until light and fluffy. Chill until ready to use. When ready to serve, place about 2 tablespoons sliced strawberries down center of pancake. Roll and sprinkle with any remaining syrup. Spread pancakes with fluffy strawberry topping. Makes 8 servings. |
