FRIED OYSTER 
3 eggs
1/2 qt. oysters
Cracker meal

Drain oysters. Beat eggs in a bowl. Spread cracker meal on wax paper. Dip 1 or 2 oysters at a time into the eggs and then roll back and forth on the sheet of cracker meal until coated. Put on cookie sheet in a layer on wax paper. Oysters should be spread out, not in a pile. Put in freezer for 15 to 20 minutes at least, to harden.

Fill fry pan half full with oil. When hot, fry oyster and drain on paper towel. Serve immediately.
