CORN MEAL WAFFLES 
1 3/4 c. corn meal
1/4 c. flour
2 tsp. baking powder
1/4 tsp. baking soda
1 tsp. salt
2 eggs, beaten
1 1/2 c. buttermilk
1/2 c. vegetable oil

Sift corn meal, flour, baking powder, soda and salt together. Combine eggs, buttermilk and oil. Add liquids to dry ingredients, stirring to mix well. Cook immediately on hot waffle iron. Allow 3/4 cup of batter for each waffle. Bake approximately 6 minutes. Yield: 4 waffles.
