NO CRUST COCONUT PIE 
1 cups sugar
6 tablespoons butter
2 cups milk
1 teaspoon vanilla
1/2 cup flour
1/2 teaspoon salt
4 eggs
1 cup coconut

Blend first 7 ingredients in a blender for 10 seconds. Scrape sides and blend for 10 additional seconds. Add 1 cup coconut. Blend for 5 seconds. Pour into a buttered pie pan.

Bake at 350°F for 55 minutes.
