SALMON CAKES 
2 (6 1/2 oz.) cans salmon, drained and flaked
1 c. mashed potatoes
1 tbsp. prepared mustard
1 lg. egg whites
3/4 c. finely chopped onion
1 tsp. paprika
1 tbsp. lemon juice
1 1/2 c. fine dry bread crumbs
2 tbsp. corn oil

In medium bowl, combine first 8 ingredients and shape into 8 patties. Put bread crumbs on plate and coat patties. In 12 inch skillet, heat corn oil over medium heat for 1 minute. When hot, add patties and cook about 3 minutes on each side.
