SPINACH CASSEROLE 
2 pkg. frozen chopped spinach
1 tbsp. minced onion, chopped fine
1 c. sour cream
1/2 c. tomato sauce
1/2 c. sliced mushrooms, canned
1 c. sharp cheese, grated
Buttered crumbs

Cook spinach per directions on the box. Cook minced onions with spinach in same saucepan. Drain spinach mixture well. Add other ingredients, reserving buttered crumbs to sprinkle over top.

Bake in buttered casserole dish in 350 degree oven for 20 minutes. If you prepare and refrigerate ahead of time, heating takes a little longer. Be sure it's piping hot when served. If you want crumbs crisper, you may put casserole under the broiler for a few minutes.
