MINI BLINTZES 
1 lb. cream cheese
2 egg yolks
1/2 c. sugar
1/2 lb. loaf Pepperidge Farm thin white bread

BUTTER MIXTURE:

1/2 lb. butter, melted
1 tsp. cinnamon
1/2 c. brown sugar

Cream together egg yolks and sugar. Add cream cheese. Beat until smooth and creamy. Set aside. Cut crust off bread. Roll each slice flat with rolling pin, spread with cheese mixture, roll, dip in butter mixture, cut in half, place on baking sheet. Can now be frozen and baked later on or baked now at 350 degrees for 20 minutes.
